Have you ever thought you had a great recipe and then it turned out to be a kitchen disaster? Well, that is just what happened to me. I thought I had worked out a wonderful recipe for a “real food” Chocolate Cake topped with a Chocolate Ganache and as it turns out the Chocolate Cake was a kitchen disaster and not very tasty. However, the Chocolate Ganache was splendid. Unfortunately, I had to scrap the cake but salvaged the Chocolate Ganache.

Now … my frugal mind says what are you going to do with that splendid Ganache? I tumbled over a few ideas and headed to Google (yes that’s how I tumble ideas lol) and found a great recipe for Chocolate Pudding. Wow!
I love Chocolate Pudding but have never made it from scratch. The pudding my Mom would make came from the boxed variety although it was the “cook” kind and not the “instant” kind. Do you know the ingredients of Jello’s “Cook n Serve” Chocolate Pudding? Here they are as stated from the Kraft Foods website:
“Ingredients: SUGAR, DEXTROSE, CORNSTARCH, COCOA PROCESSED WITH ALKALI, MODIFIED CORNSTARCH, CONTAINS LESS THAN 2% OF NATURAL AND ARTIFICIAL FLAVOR, SALT, CALCIUM CARRAGEENAN (THICKENER), POLYSORBATE 60 (PREVENTS SCORCHING), FUMARIC ACID (FOR THICKENING). *AMOUNT IN DRY MIX.”
Yuck … is all I can say. Thus, in my “real food” transition I thought pudding would become a thing of the past. Not! This Chocolate Pudding is the absolute best I have ever had! Sorry, Mom. The best news it’s even GOOD for you! Now, mind ya, if you eat this for breakfast, lunch and dinner (which you will want to do … just trust me lol) I can see the “good for you” being taken right out of that scenario. However, everything in moderation and you definitely want to “Save Room for Pudding.”
The recipe below is easy, creamy, chocolatey and soothing to the soul! It cures that chocolate crave and makes everything in the world all right again! The best news is … It.Is.Good.For.You. Can you believe it!
I hope you enjoy this as much as Big Daddy and I did. We will need to double the batch next time and there is just the two of us…. Yikes! Ohh, I remember, moderation, right? Damn ……
Easy Chocolate Pudding Recipe
Ingredients:
1/3 c. raw honey
4 tbsp. arrowroot powder (or organic corn starch)
2 tbsp. unsweetened cocoa powder
2 c. milk (or coconut milk) (I used farm fresh whole milk)
1 tsp. vanilla extract
1 tsp. grass fed butter (if using coconut milk, omit this)
To the recipe above, I added 3TB Chocolate Ganache (recipe follows).
Directions:
1. In a glass measuring cup, whisk together arrowroot powder, cocoa, and milk until relatively smooth. In a small saucepan, combine the honey, Chocolate Ganache below (or chocolate chips, if desired) and the milk mixture over medium heat. Cook until thickened, stirring constantly.
2. Once thickened, remove from heat, stir in vanilla and butter until evenly distributed.
3. Serves 4-6 or 2 (LOL). Enjoy your easy, creamy, chocolatey and soul soothing chocolate pudding! Can be served warm or chilled.
For Chocolate Ganache
Recipe is a Simplify Life with Mrs. R original
Ingredients:
1 to 1 ½ cups organic dark chocolate chips
Splash of farm fresh whole milk
1TB grass fed butter
Raw Honey, to taste
Directions:
In double boiler melt chocolate chips, once chocolate chips have melted add a splash of whole milk, butter. Stir to mix then add honey to taste.
