Easy and Delicious Homemade Berry Jam

Last week I was working on our property doing the normal “spring cleaning” when I discovered that our raspberry patch had spread threefold, not to mention I now have raspberries in various parts of the property thanks to my good friends, the wild birds.
In the past, gathering raspberries had been a battle of man versus beast … lol … Wild Birds 1, Deer 2 and Man came in dead last loosing the battle with only a small handful of these delicious berries. Needless to say, raspberries never really make it into the house and were eaten as a snack while gardening. That’s okay though, the birds and deer really enjoy them and always come back for more each spring but it would have been nice to have at least 1 jar of raspberry jam.
Well, my wild birds decided that they would help me out this year and scattered the seeds throughout various parts of my property creating at least 4 new raspberry patches! This is exciting news! So, I went around with my basket and started raspberry picking and ended up with a basketful of berries to make jam with. I was thrilled ….. finally … after all these years I get to make raspberry jam! Thanks to my little friends, we now have enough raspberries to feed us all!
However, what I didn’t expect were chiggers …. Yes …. nasty monster like chiggers. They are evil buggers and can drive a person into psychosis! Is this jam really worth it! Geeeeezzzz! Here I sit, arms and legs lacquered in clear nail polish. Not only is it clear nail polish, it’s clear nail polish with sparkles LOL! So, imagine this lacquered lady in clear, sparkly nail polish looking like Edward Cullen in the sun! LOL! What can I say, at 3am it was all I had on hand and my next choice was amputation! 

Note to Self: Next time BEFORE raspberry picking use bug spray, make sure to have regular clear nail polish and lots of alcohol on hand.

So… you ask … was the jam worth it? Absolutely! Positively, Yes!
I made 6 pints of Raspberry/Strawberry Jam and it is so easy and delicious!

Note: The measurements below are not exact. I don’t measure when making jam I go by taste but this gives you an idea where to start and then you can make adjustments as necessary.

Ingredients:
3 pints Organic Berries of your choice (strawberries, raspberries, blackberries, blueberries)
3 TB Honey, organic or raw
3 TB apple juice, organic
Juice of ½ organic Lemon
Directions:
In a saucepan, add all ingredients and set to medium low heat until berries start bubbling slightly. Once bubbling, turn heat down to low and cook until berries start to release their juices while stirring frequently to avoid burning the bottom of the pan.
Once juices have released, continue on low heat until thickened. Again, stir frequently.
Once thickened, taste for desire sweetness. Add more honey, if necessary.
Remove saucepan from burner to let cool.
Once cooled, store in appropriate sized mason jar and chill.  Jam will continue to thicken in the refrigerator.
Lasts approximately 1 to 2 weeks in refrigerator, but it never sits around here that long so I’m not real sure here. I think I might have to leave one jar alone to see exactly how long it will last.
