Hard-Boiled Egg Sandwich


1 tablespoon Homemade Mayonnaise
1 teaspoon Dijonmustard
1 tablespoon chopped fresh flat-leaf parsley, organic or from the garden
2 slices 5 Minutes a Day for Fresh Bread or your favorite whole grain/whole wheat bread
2 farm fresh hard-boiled eggs, sliced (*)
1/2 cup organic watercress leaves, spinach or your favorite lettuce
sea salt and cracked black pepper


In a small bowl, combine the mayonnaise, mustard, and parsley and spread evenly over both slices of bread. Layer one slice with the eggs and lettuce of your choice and season to taste with salt and pepper. Top with the other slice of bread.

*TIP: To make the perfect hard boiled eggs, put eggs layered in bottom of pot bring to a boil and let boil for 1 minute. After 1 minute turn off heat, cover pot and remove to cool burner and let sit for 11 minutes. Voila, the perfect, never over cooked hard boiled egg!
